Juicy Ripe Tomatoes

It’s summer and what better treat that juicy ripe tomatoes still warm from the garden.  They bear no resemblance to those pale pink tomatoes that my local grocery store sells the rest of the year!  Let’s make a sandwich.

Slice the tomatoes.

Toast some whole wheat bread and spread it generously with mayonnaise.  I like Kraft reduced fat mayo made with olive oil.  It’s very flavorful.  Season with salt and pepper.

Add a glass of cold milk.  My favorite summer sandwich.  Yummy!

    I agree, nothing better than home grown tomatoes. Especially those that come from the South. Your sandwich also can't be beat. Some time when "pork fat rules" wins out we put a couple of slices of bacon on there. Yummy....

  2. Tomato sandwiches will do for me Rhondi (that's tom-ah-to I mean!).

    I like cucumber sandwiches too - just fresh white bread spread with Philadelphia cheese (with or without flavouring)and plenty of lovely cucumber (not the gherkin type) then sprinkled with salt and black pepper. Or even leave out the Phili and spread the bread with butter.

    But my absolute favourite way for either tomato or cucumber is to make them and then leave them wrapped up for a few hours so they get a little bit soggy. You wouldn't want to offer them to company but just for on your own! Mmm, cloud 9!

  3. Oh I do love tomato sandwiches but it has to be Hellman's mayo for me. You're very lucky to have tomotes this summer. My garden didn't produce much of anything because we've had such a weird weather summer.

  6. I love fresh garden tomatoes. With fresh mozerella, basil, olive oil, sea salt and freshly cracked pepper.

    OH! And fresh corn on the cob with melted butter...

  7. Mmmmm that looks so good! And those tomatoes are so big and juicy looking. I am so jealous. We live in the desert so it's hard to grow anything here.
    It's been so hot this summer so I've been drinking fruit smoothies. It's become my favorite summer treat!

  8. Gosh, is it possible to eat too many tomatoes? I hope not because sometimes a meal for me is just sliced tomatoes and salt. I dread the winter when I can't find fresh tomatoes, I would rather not have any at all if they aren't vine riped. Your tomatoes look delicious, think I will make a plate of sliced ones now. YUMMY!!

  12. I love summer tomatoes too! And my husband's favorite summer food IS the tomato sandwich. My favorite meal though, happens to be spaghetti and meatballs and a green salad. Unfortunately I don't do this meal anymore (except for the salad!) because I could eat the whole meal myself!

  15. Is that what we've been buying in the supermarket to put in our salads,tomatoes? Ya' just can't beat the taste of a real homegrown tomato yet a big old cold sweet juicy watermelon takes the cake for me. Enjoy this days produce!!!

  17. Your photos look good enough to eat. Our generous neighbor has been giving us baskets of tomatoes from his garden, so I've enjoyed lots of yummy sandwiches. Also, I've made spaghetti sauce and salsa.

    I think one of my favorite summer foods is blueberries. I eat them every morning.

  20. Vine ripened tomatoes sliced on a "BLT" is my summer favorite! (incase anyone has forgotten what BLT is - Bacon, Lettuce, and Tomato) They taste the best and we have them coming outta our ears at the moment!

  23. Our big tomatoes are just beginning to turn pink but those photos make me want to go outside and encourage them to ripen somehow! As the song says "There's only to things that money can't buy, and that's true love and homegrown tomatoes":>)

    I love and miss the taste of home grown tomatoes. We are in SW Florida right now and stuff down here tastes like hot house. Plants need good dirt not sand to grow in.

  34. Delicious! I love tomatoes and have eaten them all my life and tomato sandwiches are such a big favourite so I'm really temted by your your mouth watering pictures Rhondi. Not enough sun in our northern region of England to ripen them really well so shop bought ones are our only option!!

  37. Isn't it great being able to gather such fabulous tomatoes everywhere for a few months.....then we crash when Winter comes and they are gone!

    Love them like this in a sandwich, also sliced and layered with fresh mozzarella, basil, EVOO, fresh cracked pepper and a tiny sprinkle of French herbed sea salt. Yum, think I'll make a sandwich for lunch today......after I get back from the dentist!!!

OOFTA, that sandwich made my mouth drool, lol that right there is my favorite summer sandwich, and another is a green pepper sandwich, I cut a green pepper in half, right out of the garden and butter bread and wala that is a favorite of mine too, I do love them fresh veggies.
